Hungarian Poppy Seed
and Walnut Rolls
Hungarian Poppy Seed and Walnut Rolls, Poppy seeds Roll (Mákos bejgli) and Hungarian Walnut Roll (Diós bejgli) [pronounced bay-glee] per Mom, Anna (Kovacs) Kreiner from Debreczen, Hajdú-Bihar, Hungary.

Dough Ingredients:

1 lb. all purpose flour (sifter 4 Cups)
1/2 lb. butter
3 egg yolks (save egg whites)
1 yeast (cake)
3 tbsp sugar
1/2 tsp salt
1/4 pint sour cream
Lemon rind

Preparing Dough:

Mix flour and butter as for pie.
Add egg yolks, sugar, lemon rind, salt,
yeast (moistened with milk)
Then add sour cream.
Make 2 balls, put in fridge overnight.

Walnut Fillings:

Finely ground walnuts, Sugar, Vanilla, Gold Raisins.

Poppy Seed Fillings:

Poppy seed spread, Honey, lemon juice, Gold Raisins.
One hint on the Poppy seed, we used the filling by Solo and warm it in sauce pan with a little milk for easy spreading.

Prepare for Baking:

Roll out, spread fillings and roll up.  Put seam on the bottom.  Brush with beaten egg whites.

Bake at 350 degrees for one half hour until golden brown.
